Mexican Style Grilled Stuffed Tomatoes


  • 8 Medium Sized Vine Tomatoes
  • 1 T Olive Oil
  • 1 Lb. Ground Beef
  • 1 T Taco Seasoning
  • ½ Small Onion, chopped finely
  • 1 t Cilantro
  • Salt, to taste
  • Pepper, to taste
  • 1 C “Mexican” Style Grated Cheese


  1. Add the olive oil to a large skillet, brown the ground beef. Once browned, turned the heat down and stir in the onions, taco seasoning, cilantro, salt and pepper. Once the onions are translucent, remove from heat and drain the excess liquid.
  2. Wash and dry the tomatoes. Cut the top off and scoop out the innards of the tomatoes.
  3. Using a large spoon, fill the tomatoes with the ground beef. Place the tomatoes onto the Outset Veggie Accordion Skewer. Top the tomatoes with shredded cheese.
  4. Place the accordion skewer over medium heat and allow the tomatoes to roast until slight charring has occurred on the skin.
  5. Remove from heat, season with cilantro, and serve.
