Grilled Shrimp Quesadillas


  • 1 lb. Shrimp, medium size peeled and deveined
  • 1 T extra virgin olive oil
  • 1 C red bell pepper, diced
  • 1 C green bell pepper, diced
  • ¾ C red onion, diced
  • 1 jalapeño, seeded and diced
  • 1 T chili powder
  • 1 lime
  • 6 large flour tortillas


  1. On the stove top, combine the extra virgin olive oil, red pepper, green pepper, red onion, jalapeño in a medium size pan and sauté until onions start to appear transparent. Place in a small bowl.
  2. In the same pan, cook shrimp, roughly 3-5 minutes over medium high heat. When shrimp is completely cooked, stir in pepper mixture and chili powder.
  3. Preheat stove to medium heat or 450 degrees.
  4. Transfer ingredients to the grilling area. Place a large flour tortilla in an Outset Quesadilla Basket and load pepper and shrimp mixture onto half of tortilla. Spray with one squirt of lime juice. Cover with cheese and fold the tortilla to cover. Close basket and place over heat for 4 minutes on each side.
  5. Remove from heat and place on dish. Cut into quarters and serve.
